“Vérifions maintenant s’il s'agit d’un mâle ou d'une femelle. Lors des safaris, il est interdit de garder les femelles pour éviter la surpêche.”
“Il existe également une taille minimale. Toute prise inférieure à 13 cm doit être remise à l’eau.”

Des géants succulents

Le crabe royal est relativement nouveau en Norvège, et ce n'est qu'en 1977 que le premier spécimen a été pêché dans le pays. À l'époque, il était connu en Norvège sous le nom de « crabe du Kamtchatka », en référence à la péninsule située sur la côte est de la Sibérie.

Le crabe royal qui vit aujourd'hui en Norvège provient du fjord de Mourmansk, où il a été relâché par des biologistes soviétiques dans les années 1960. Depuis, la population s'est étendue à la Norvège du Nord, où elle prospère dans ses eaux froides.

« Il existe plus d'une centaine d'espèces de crabes royaux. Le crabe royal rouge est la deuxième plus grande espèce et c'est aussi l'une des plus courantes à dans nos assiettes », explique Michael, guide de pêche au crabe royal au Snowhotel Kirkenes.

La chair du crabe royal est tendre et savoureuse : elle est souvent comparée à celle du homard. Selon Michael, la partie la plus exquise est l'épaule.

« Le muscle de l'épaule est le filet du crabe royal. C’est la chair la plus tendre du crabe », affirme Michael.

Vous voulez y goûter ? La plupart des safaris au crabe royal en Norvège incluent de nombreuses dégustations. En d'autres termes, vous en aurez pour votre argent, car les crabes royaux figurent parmi les mets les plus chers sur les menus des restaurants.
